We have been snowed in ALL WEEK! I wanted to factor in some free time for myself this coming week and there is no better way than putting dinner on auto-pilot, ahem… in the slow-cooker.
Here are 5 of my favorite slow cooker meals that you can make this week to give your self a little extra time to your self.
1. Black Bean Soup – this is one of our all time favorites. I make whole wheat cheese quesadillas as a side and we load up our soup with things like, avocados, salsa, cheese and tortilla chips. The leftovers make a great Black Bean Quinoa bowl!
2. Vegetable Beef Soup – I have been making this for years and it freezes so well. Make some cornbread to go on the side, or serve with a grilled cheese sandwich. You can’t really go wrong with this one.
3. Herbed Chicken Thighs with Rice and Spinach – This was created by accident one day when I was trying to make a healthier slow cooker meal. You can use any kind of chicken, even a whole chicken and sub the rice for quinoa if you like. The key to this meal is to pour lots of chicken broth over the dish to wilt the spinach.
4. Chicken Noodle Soup – I cook my own bone broth in the slow cooker all day then whip up some yummy soup. This is also a great one to serve with grilled cheese sandwiches. This is the kids favorite.
5. Spicy Lime Chicken Thighs with Coconut Rice and Beans – This is soooo good. Serious comfort food, but healthy too.
