Buttermilk Pie

My grandmother was an amazing cook.  She made an egg custard pie that was absolutely out of this world.  I tried my best to make it, but custard pies are an artform, much like bread baking – and I have not come close to perfecting it.  So, I caved and I make a Buttermilk Pie instead.  This pie is so easy and satisfies my taste for “custard”.

The best part of this is you just put it in a blender then pour into a pie shell plate.  Nothing else needed.  I hope you like it!

Buttermilk Pie

1/2 cup biscuit mix (like Bisquick)
1 cup sugar
1 cup buttermilk
1/3 cup butter, melted
1 teaspoon vanilla
3 large eggs

Combine all ingredients, yes all, in a blender and process until smooth. Pour into a pie plate, coated in cooking spray.

Bake at 350 degrees for around 30-4o minutes or until browned. Let it cool 15 minutes before serving and garnish with powdered sugar.

Note:  The pie should still wiggle a little in the center, it will set as it cools.

      Nope! The bisquick floats to bottom and makes a crust! How cool is that? and it is really yummy. 🙂
