Christy is a dear friend. We have been on a couple of mission trips together (to Ecuador in February 2012 and to Nicaragua in June 2013), and I absolutely adore her. If you haven’t read her blog, Southern Plate, you need to get over there. Honestly, it’s like you are sitting in her kitchen. She has great stories, and she is the best storyteller. And more importantly, her food is unbelievable. I have her first book, Southern Plate: Classic Comfort Food That Makes Everyone Feel Like Family, and it’s got lots of great southern style recipes. Also, follow her on Facebook, her attitude will change your life.

The new cookbook is all about getting your family back to the table for delicious, budget-friendly, kid-pleasing recipes. That is what I am all about. Christy is the friend who gets your hectic schedule, your long workday, and your desire to re-connect with your family at a dinner table that looks and tastes like you spent all day preparing for it–even though you didn’t. She makes that slow cooker work for you, and also offers lots of easy, one-dish meals. You’ll be bringing everyone–including yourself–home to a great meal.
Here’s one of my favorite recipes from Come Home to Supper: Over 200 Casseroles, Skillets, and Sides (Desserts, Too!) to Feed Your Family with Love.
- Cooking spray
- 1 package (14 ounces) frozen mixed vegetables
- ¼ cup (1/2 stick) butter
- 1 cup chicken broth or 1 chicken bouillon cube dissolved in 1 cup water
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 3 tablespoons all-purpose flour
- 2 cups heavy (whipping) cream
- ½ cup chopped onion
- 2 cups cubed cooked chicken
- 1 cup yellow or white cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup milk
- ¼ cup (1/2 stick) butter, melted and cooled
- 2 large eggs
- 1 cup shredded Cheddar cheese
- 1 can (15 ounces) corn, drained
- Preheat the oven to 400°F. Coat a 9- by 13-inch baking dish with cooking spray.
- Make the filling: Place the frozen vegetables in a large saucepan and add water. Bring to a boil over medium-high heat and cook until the vegetables are just tender, 5 to 10 minutes. Drain the vegetables and set them aside.
- Melt the butter in a small saucepan over medium heat.
- Add the chopped onions and sauté until just barely tender, 2–3 minutes.
- Add the chicken broth, salt, pepper, and flour and stir until well combined.
- Add the cream and cook, stirring constantly, until the mixture has thickened, about 5 minutes. Remove from the heat and pour over the vegetables.
- Stir in the chicken.
- Spoon the vegetable mixture into the bottom of the prepared baking dish and set it aside.
- Make the cornbread topping: Place the cornmeal, flour, sugar, baking powder, and salt in a large bowl and stir.

Biggest hinderance, time management and scheduling.
My biggest hinderance is many schedules of my family and I always think I have more time then I do. I already get your newsletter.
My biggest hinderence is crazy life! Divorced mom and work 40+ hours a week and lead a girl scout troop. By the time I get home, get laundry started, help with homework, etc. I am done! Would love something to help me with some easy ready to eat meals so we aren’t eating fast food or cereal for dinner.

I love cooking for my family! The cornbread chicken pot pie looks amazing…going to have to try it out very soon! I work full time, and time/meal planning is one of my biggest obstacles!
TIME!!
Biggest hindrance….finding the time to make a really good meal. We always eat together but a lot of times I’m throwing something together at the last minute. Also, my children are picky eaters and one has food allergies so it’s always a challenge to cook something everyone will happily eat! This book sounds perfect for my family and would help me accomplish several kitchen goals (providing healthy and yummy meals everyone will eat while providing time to do things other than stay in the kitchen for hours preparing)

Biggest hindrance to cooking dinner, although I do it every night, is having a recipe for my ingredients. I always by what’s on sale, then spend time figuring out what to make with it. Enjoy following Christy on FB. She’s such a good encourager!
