This is a recipe from my friend Jennifer. It makes plenty, filling my crock pot to the top. This is absolutely delicious, with just the right amount of zing. If you’re love chili, this recipe offers you a little something different, using chicken and zesty taco seasoning rather than the traditional beef and chili seasoning. Try it with jalapenos on the top if you want some extra yum! Serve with the time-honored sides of corn chips and/or baked potatoes, or keep the taco theme going with sides like Black Bean Nachos or Taco Salad.
- 1 onion, chopped
- 1 16-oz. can black beans
- 1 16-oz. can kidney beans
- 1 8-oz. can tomato sauce (used a 16 oz. can instead)
- 10 oz. package frozen corn kernels (or 2 small cans of corn kernels)
- 2 14.5-oz. cans diced tomatoes w/chilies
- 1 packet taco seasoning
- 1 Tbsp. cumin
- 1 Tbsp. chili powder (I use a bit more if the tomatoes don’t have chilies)
- 24 oz. (3) boneless skinless chicken breasts
- chili peppers, chopped (optional)
- chopped fresh cilantro
- Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker.
- Place chicken on top and cover.
- Cook on low for 10 hours or on high for 6 hours.
- Half hour before serving, remove chicken and shred.
- Return chicken to slow cooker and stir in.
- Top with fresh cilantro.
- Also, try it with low fat cheese and sour cream (extra points).

SINCE I DIDN’T HAVE EVERY THING I CHANGED IT A LIL I USED CAN CORN DRAINED,AND BOILED THE CHICKEN FOR FASTER COOKIN TIME… ITS GOOD
Came across this recipe and wanted to give it a try but my husband isn’t crazy about chicken. So I substituted 3 pounds of browned ground beef for the chicken and cooked it for four hours on high. Then once it was done cooking I stirred in about a cup of chopped cilantro and it was a hit! We had all the taco toppings we usually put on out tacos and crumbled up tortilla chips into the bowls and it got the thumbs up from all 3 of our kiddos, and my husband too! Thanks for the recipe!

I must say that this has become a favorite in my house. My hubby can’t get enough! The first time I made it, I told my parents to stop over and get some (thinking it was too much for the 2 of us) but before they could get there, my husband had eaten most of it. LOL! I’m making it again tomorrow. Neither of us are big black bean fans, so I typically use kidney and pitno. I keep everything else pretty much as written though, which is unusual for me — I like to experiment and change things up. Thanks for a great, easy recipe!
Have made this a couple of times now, and we enjoy it so much! I change things around a bit sometimes, different beans, added some red and green peppers, or a bit of powdered ranch dressing too. We really like it, and it does make quite a bit. Sometimes I just use one chicken breast instead of two. I love it’s cost effective and would probably be just fine with no meat at all, just an extra can of beans! Thanks so much for sharing with us.

Do you drain any of the cans? Or just dump everything, juices and all?
Drain the cans of beans, but not the tomatoes.
BEST crockpot recipe EVER!!!!! Thanks so much! I served with sour cream, shredded cheddar cheese and Tostitos multi grain nacho chips on the side and OMG…..Delicious!!!! I will be making this weekly. I cooked overnight on low x 10 hours and shredded the chicken and it was perfect!! My daughter asked for a copy of the recipe which I printed and she planned on making it for her family as it was such a big hit! If you love chili, then you will love this chili with a twist!

This is so easy – and delicious! I recently served it at my son’s birthday party, and the whole family loved it! We love mexican food and chili, and this is the perfect combo!
