This is a nice, thick, creamy, fresh spread for a sandwich or it can be used as a vegetable dip. I love cream cheese, so I love this! Plus it is a great way to use a lot of cucumbers.

cucumber dip
Thank you for this wonderful and refreshing salad spread/dip. I can see it also with red bell pepper,
pimento, green olives, or crab, etc. What do you think and have you added any other ingredients?
Maybe even pecans or walnuts, raisins? Thanks again. mt 🙂
That cucumber sandwich spread and dip sounds so refreshing — light, creamy, and perfect for both summer lunches and quick snacks. I love how something so simple can feel fancy when served right, especially with a touch of dill or garlic. It’s also a great make-ahead option for gatherings.
