Have you noticed I have been light on the menu planning this summer? Well, I have learned a huge lesson…the same one I teach you in my workshops! No meal planning=overspending. I am seriously buckling down starting this week and getting back to my budget and my meal planning.
I am starting with the fresh vegetables I got this weekend from my CSA share. I have cabbage, more eggplants, peppers and thankfully LOTS of tomatoes! I flash froze the green peppers diced and sliced. I will use it for dishes like fajitas and spaghetti in the fall.
I was a little clueless what to do with the cabbage, but my Facebook fans left me some great ideas. I will be trying Bierocks for the first time ever, and I am hoping to make a huge batch that will make enough to put into the freezer for later!
I am making a few dishes ahead of time to use for lunch like orzo salad pasta and I will be making some energy cookies that I can’t wait to share!

apples w/ peanut butter

I put cheese in my bierocks and you can use egg roll wraps and frozen dough thawed or even biscuits, my husband and I have made these many times and use a different casing each time we are waiting for this batch to be done from the freezer before we make more.
