Meal Plan for the Week of June 6th

If you haven’t noticed, we are a little looser around here with meal planning in the summer.  The reason being, I like to cook whatever comes from the garden, but unfortunately my garden isn’t doing a lot this year.  Unfortunately, the Nashville Flood set the garden back a bit, so we don’t have as much as hoped.  Oh, well…better luck next year.

I really stocked up on produce this week for eating now and stocking ahead.  I have lots of strawberries that I flash froze and I will be working on all the $.99/lb Kroger peaches today.

Sunday:

(Lunch)  Grilled Ham & Swiss sandwiches, pickles, watermelon, cantaloupe and chips

(Dinner) Grilled Chicken Fajitas, fresh guacamole, black beans

Monday:  Roast Sticky Chicken, vegetables and wheat rolls

Tuesday:  $2 Jet’s Pizza!!!!!!!!!

Wednesday:  Chicken Enchiladas, salad, chips and salsa, guacamole

Thursday:  Spinach Cream Cheese Lasagna, salad, garlic bread

Friday:  Hamburgers, beans, chips, watermelon

Saturday:  Grilled Hawaiian Pizza, watermelon, cantaloupe

Lunches:

Quesadillas
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
salads
Tuna Sandwich
Leftovers –  pizza, lasagna, enchiladas

Breakfast:

homemade yogurt, granola and fresh strawberries
peanut butter smoothie, whole wheat toast w/ butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Snacks:

homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
cheese slices on triscuits
