Menu Plan Monday: December 14th

Welcome!  For those of you who are new to Meal Planning, go to my “Meal Planning” tab here to help you out while you are getting started – lots of great resources.

What about you, what is on your meal plan this week??

Meal Plan for the week of December 13th:

Sunday:
(Lunch) Subs with BOGOF coupon
(Dinner)  Crockpot Pot Roast, mashed potatoes, green peas, whole grain loaf (didn’t have it last week)

Monday: Dinner out

Tuesday:   French Dip Sandwiches (out of leftover pot roast), sweet potato fries, salad

Wednesday:    Dinner at mom’s!

Thursday:  Beef Enchiladas, green salad

Friday: Something with Chicken Breasts, any ideas?  Pick dinner for me!

Saturday:    Family Christmas Dinner

Lunches:

Turkey /Tuna Sandwiches
Grilled Cheese Sandwiches, sliced apples
PB&J,  sliced apples
Leftovers – beef quesadillas, sandwiches

Breakfast:

freezer waffles w/ frozen strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal,  whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Snacks:

homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
applesauce
go-gurts
string cheese
cheese slices on crackers

    I have a great recipe for chicken.

    Chix Croissants:
    1 – 8 creasant rolls
    1-2 Chix breats (cooked & diced)
    4 oz. cream chez
    1/4 cup – melted butter
    1 – med. onion diced (optional)
    1/2 package – frozen chopped broccoli (you can do fresh too)

    Saute onions & broccoli
    Combine butter & cream cheese
    Add in veg & chix to cheese mixture
    Spoon mixture onto croissants, then roll up.
    Cook 350 for 11-13 min. (until rolls are cooked)

    SO YUMMY!

    We are having Balsamic Chicken with Onions tonight. I got the recipe from $5 Dinners website – http://www.5dollardinners.com/2009/12/balsamic-chicken-with-onions.html The picture is what hooked me.

    Balsamic Chicken with Onions

    Pour some of the juices from the pan over the chicken after you serve it on each plate. And YUM!

    Ingredients
    1/4 cup olive oil ($.50)
    1/4 cup balsamic vinegar ($.35)
    Salt and pepper
    3 medium or 4 small boneless skinless chicken breasts, about 1.3 pounds ($2.58)
    1 yellow onion, sliced ($.30)

    Directions
    Preheat oven to 350.

    1. In small plastic container, add the olive oil and balsamic vinegar. Shake in a few dashes of salt and pepper. Close the container and shake vigorously, until well combined.
    2. In 8×8 baking dish, place the chicken breasts snuggly into the dish. Add the sliced onions on top. Pour the balsamic vinaigrette over the chicken and the onions.
    3. Bake at 350, uncovered, for 50-60 minutes, or until chicken is no longer pink in the middle. Cooking time may vary depending on thickness of the chicken breast.

    Here is a easy Chicken breast recipe and tastes great

    I but frozen chicken breasts in the crock pot with a jar of salsa cook on low for about 3 hours . Before I serve I make rice and but the chicken and salsa over it with cheese sprinkled on top.
