Mission – Back To School

Now, while I like to make homemade tortillas , I love having Mission Tortillas on hand as a pantry staple to help me out when I am in a pinch. I was happy to know that they have 0% Transfats, no lard and no cholesterol. I also like how they have 3 sizes (6, 8 and 10 inch) which means I can use them for soft tacos, roll-ups or large burritos.
One of my favorite ways to make dinner is to just use what I have on hand. Last night I had leftover chicken from Fajitas, canned black beans, an avocado and all the fixins. So, I decided to make a Chicken & Black Bean Rollup with Guacamole Dip.
Chicken & Black Bean Rollup with Guacamole
Mission Tortillas – medium size 8 ”
Leftover Chicken
Black Beans, drained and rinsed
Shredded Cheese
Homemade Guacamole
Heat tortillas in the microwave covered in a wet paper towel for 30 seconds. Fill with leftover chicken, beans, shredded cheese and homemade guacamole.
Roll up and eat!
I have more problems what to do with leftover guacamole 🙂 but this look really simple and tasty.
