Spicy Lime Chicken Thighs with Coconut Rice and Beans

spicy-lime-chicken-thighsThis is my favorite meal to make when I have chicken thighs, I adapted it from Robin Miller’s Chipotle Lime Chicken Thighs.

Never tried chicken thighs?  You are missing out.  They are the tastiest part of the chicken, and a much more affordable cut because I usually get them for around $.79 per pound (or $1.99/lb organic).  I am trying to purchase more organic meats and chicken breasts are just too expensive for us right now.  However, chicken thighs and whole chickens fit into the budget nicely.

Put onion, celery and carrots in bottom of slow cooker. Season chicken thighs with salt and pepper and arrange over vegetables.

Serves: 4-6 servings
Ingredients
FOR THE CHICKEN:
  • 1 cup sliced onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 pounds skinless chicken thighs
  • Salt and freshly ground black pepper
  • 1 (15-ounce) can tomato sauce
  • ¼ cup lime juice
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • ½ teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • 1 avocado, diced
  • ¼ cup chopped fresh cilantro leaves
  • Lime wedges, for garnish
FOR THE RICE AND BEANS:
  • 2 cups instant brown rice
  • 1 (14-ounce) can coconut milk
  • 1 cup water
  • 1 (15-ounce) can red beans, drained
  • 1 teaspoon dried thyme
  • ½ teaspoon finely grated lime zest
  • ¼ cup chopped green onions
  • Salt and freshly ground black pepper
Instructions
FOR THE CHICKEN:
  1. Put onion, celery and carrots in bottom of slow cooker. Season chicken thighs with salt and pepper and arrange over vegetables.

FOR THE RICE AND BEANS:
  1. In a medium saucepan, combine rice, coconut milk, water, beans, thyme, and lime zest. Place pan over high heat and bring to a simmer.
  2. Reduce heat to low, cover and simmer 5 minutes, until liquid is absorbed.
  3. Fold in scallions and season to taste with salt and pepper.

      I love the recipe, mostly the pictures. The pictures are the ones that make me think “I have to do it, I have to do it right now”.

    This is now going to be a regular on our menu! It was delicious! Chicken meat was fall off the bones tender. I don’t like spicy food, so we just left out the red pepper flakes. My husband took the remaining sauce and veggies from the crockpot and blended them in a blender to pour on top of the chicken. We had left over sauce, so we are thinking about using it with spare ribs. Not so thrilled with the rice, it was too sweet for my tastes and I didn’t like the coconut flavor with it. My husband doesn’t like kidney beans (too firm), so we will not use the rice recipe again. Thanks for sharing!

    I was able to get Tyoson Chicken thighs, the whole pack, for .30 cent @ Dollar General Market ( Om starting to give dgm some props!!) Had 1 dollar off any tyson chicken (mailer)m and the thighs were 50% off @ 2.29!

    I wanted to like this dish so much. The description, ingredients and pictures all looked wonderful. It came out rather bland. It was not exotic tasting as implied by the combo of chile, lime, coconut milk, etc. Just tasted like a tomato based chicken stew- a nice stew but I was hoping for something different and special tasting.

    Super yummy, I add more spice and use 8 oz tomato sauce and a can of fire roasted tomatoes. I make the rice in my rice cooker and it is divine!
