This week, I’ve decided not to cook. Instead, we are going to enjoy some of the great meals that I’ve had stashed away in the freezer for a while. This will free up some freezer space that I’ll be needing as we head toward the holiday season, plus it will give me a break. (And sometimes, moms need to take a break!) I’m really looking forward to kind of taking the week off…
My Weekly Meal Plan
My Weekly Meal Plan is below. These meals are straight from my freezer, along with fresh produce from our CSA box.
Sunday: Mini Meatloafs with a garden salad.
Monday: Chicken Tetrazzini and Grilled Cabbage. Whenever I make this dish, I always divide it so that we have one to eat immediately, and one to freeze for later. Typically, the one that is frozen ends up serving as a gift to a family with a new baby or to welcome a new neighbor.
Tuesday: Breakfast for dinner! We’re actually having quite a feast with a Hashbrown Quiche, Applesauce Muffins, and Breakfast Burritos.
Wednesday: This recipe for Pork Taquitos is perfect for freezing, and I’m so glad I did. We’ll enjoy these with an easy side of Spicy Black Beans and Garlicky Kale.
Thursday: I have some leftover spaghetti sauce in the freezer from just last week, so we’ll have that over whatever pasta is in the pantry, with a light salad.
Friday: Pizza Night! Homemade Pizza Dough with Homemade Pizza Sauce, both in my freezer. We’ll top with whatever is in the fridge.
Saturday: Date Night!
