Weekly Meal Plan for January 8, 2012

As you’re putting together your meal plan for this week, remember that there are some items that are always going to be on sale during the month of January, no matter where you shop, such as these seasonal items:

  • Avocado
  • Broccoli
  • Brussels Sprouts
  • Cabbage (Not a cabbage fan? You might like my Bierocks (Cabbage and Beef Pockets), my Cabbage Salad with Apples and Ginger Vinaigrette, or my Cabbage Soup.

It’s National Oatmeal Month, so you’ll find oatmeal products on sale everywhere, too. Plus, as we head toward the Super Bowl, you’ll see sales on chili fixings (beans, tomato sauce, chili seasonings), ground beef, chicken, and chips.

KROGER (Prices good all week)

It’s a good week for produce at Kroger. You’ll find Fuji Apples ($.99/lb), Bartlett Pears ($.99/lb), Strawberries ($2.50), Broccoli ($1.50), and Cauliflower ($1.99). Also, Boneless Pork Loin ($1.99/lb) and Pork Spareribs ($1.79/lb). You’ll want to STOCK UP on Perdue Whole Chicken ( $.79/lb). This is a rock-bottom price, and there are so many things you can do with a whole chicken! Get all the Kroger Deals HERE.

  • Roasted Chicken (also known as Roast Sticky Chicken)
  • Homemade Chicken Stock *Great to make from leftover Roast Chicken!
  • Chicken Enchiladas
  • White Chicken Chili
  • Sweet Chicken Salad
  • Marinated Pork Tenderloin
  • Slow Cooker Pork Carnitas

PUBLIX (Shop before prices change on Wednesday)

Lots of great deals at Publix this week! Be sure to get the Old El Paso Dinner Kit, 8.4 to 19.2 oz ($1.59), Prego Italian Sauce, 23.5 to 24 oz ($1.04), Tostitos Tortilla Chips, 14.5 to 18 oz ($2.49), Ronzoni Healthy Harvest Pasta or Garden Delight, 12 to 13.25 oz ($0.94), and Fresh Express Salad Blend, 5 to 12 oz ($1.99). STOCK UP on Boneless Skinless Chicken Breast ($1.99/lb) This is my stock up price–whatever you have in your budget that you can use for stockpiling, spend on chicken! Find all the Publix Deals HERE.

ALDI (Shop before prices change on Wednesday)

You’ll find Tyson Fresh Ground Chicken ($2.69/lb), Fit & Active Turkey Bacon, 12 oz ($2.29), and Fit & Active 2% Milk Shredded Cheese, Mexican Blend or Sharp Cheddar, 12 oz ($2.99). Plus, STOCK UP on Season’s Choice Frozen Mango Chunks or Sliced Strawberries, 32 oz ($3.29), perfect for making smoothies! Find all the Aldi Deals HERE.

  • Black Bean and Ground Turkey Tostadas. (Try these with ground chicken.)
  • Taco Meat (Ground Turkey) (Try these with ground chicken.)

  • Breakfast Burrito with Spinach and Bacon

    I read a great tip about buying whole chickens recently. Take the chicken out of the packaging and remove the giblets, then repackage the chicken in a gallon size ziploc freezer bag. Discard or freeze the giblets seperately. With your chicken frozen this way it can go straight from the freezer to the crockpot if you wish but they will also thaw alot faster if you are thawing. I don’t know why I did not think of this before!

    All of your meals sound delicious! I do have a questio, though… I understand that you are listing deals from each store & meals that you could make using hose deals. But are you really cooking all of those meals? If so – wow! If not, hen what is your actual meal plan for this week? Maybe I am just misunderstanding! 🙂

      Christi – No! I am not cooking all these meals! Next week I will show ideas for what is on sale PLUS my personal weekly meal plans. No worries lady. I can’t possibly do all that, he he!
