Tonight’s Dinner is…Black Bean Tostadas with Black Bean and Corn Salad. I have a craving for some Mexican, tomorrow is Cinco de Mayo you know! I am using all the cherry tomatoes, frozen corn and black beans, plus a few spices and vinaigrette to make a yummy black bean salad that is my absolute favorite!!

this is also a great way to save water in meal prep, which we all have to do here in nashville. for the next several days we are planning to eat as much as possible of things like sandwiches, salads, tortilla-type items, pizzas, etc, as none of them really require water to prepare except for any fresh vegetables that need to be cleaned, and they can be prepared in ways that don’t require pans that need to be cleaned up afterward.
Greek Chicken Wraps, Sun Chips and Red Grapes…using some of those BOGO flour tortillas from Publix and Grapes on sale at Kroger.
