My husband is going to a friends tonight to watch the Basketball games and me and the kids are staying here. I am not going to make a big meal, but I have lots of chicken left from last night. So, any ideas on what I could easily make for one person + 2 little people out of shredded rotisserie chicken???

chicken quesadilla
Super simple Crescent pockets=enclose chicken, cheese (or cream cheese, yum!) and Rotel tomatoes in crescent roll dough and bake by directions of rolls. Of course, you change the contents to whatever you have. You can't go wrong with crescent rolls and cheese, lol.
Chicken Puffs
Chicken, cream cheese, onion or onion flakes, maybe milk…mix, put into crscent rolls and bake (I can give you actualy measurements in you want them. : ) )
I often make a chicken pasta, make a rouge with butter and flour, add chicken stock and stir until you get a sauce consistency. Add the chicken and cooked pasta of choice. I use egg noodles. When I want to dress it up I add sauteed mushrooms and onions.
a super easy casarole is a fav at my house – shredded chicken, fresh broccoli florets, shredded cheddar cheese, 1 can of cream soup (any variety) few dashes of soy sauce – mix all and top with dry stuffing tossed in melted butter – bake until bubbly… yum!!
if you have a “helper” meal you could use it! the more flavor the better and your chicken probably has a lot of falvor! we did this last night with a Macaroni Bar and Grill Alfreado box…it was SUPER yummy!

1 Can Chicken Broth
Bring To A Soft Boil
Add 6 Bisquits, Quartered
Continue To Cook 20 Min. Covered
Easy Chicken Dumplings=SO Yummy!
Maybe chicken salad which you can either eat with crackers or as a sandwich.
Chicken and rice. I do a super easy and quick chicken and rice with the minute rice, chicken broth and shredded chicken. Just add all the ingredients to the pot and cook until the rice is ready!
We make Chicken, Swiss, and Tomato sandwiches with leftover chicken. You can use either shedded or sliced swiss and diced or sliced tomatoes. We drizzle on honey mustard, ranch dressing, or caesar dressing. Sometimes we include a little bit of dill or fresh basil as well.
