Greek Chicken Pita

I had lots of questions on my recipe for Greek Chicken Pita’s w/ hummus, and I am sorry it took me this long to post it. There are lots of variations on this, so add your favorites mix-ins. Here are my ideas.

Greek Chicken Pita

Ingredients

  • Whole Wheat Pitas
  • Salad mix
  • Tomatoes, diced
  • Red and green peppers, diced
  • Red onion
  • Cucumber, diced or sliced
  • Feta cheese (frozen from large Costco block)
  • Kalamata olives
  • Diced grilled chicken (Perdue shortcuts on clearance, pulled from freezer)
  • Greek Dressing (Try my homemade Greek Dressing HERE)

Instructions

  1. Toss all ingredients (minus pita) in a small bowl to lightly coat with dressing.
  2. Cut pita in half and microwave just until warm and pliable – about 10 seconds.
  3. Open and stuff with salad mix.

Thanks for the hummus recipe – all the ones I’ve ever seen have tahini paste in them (which is expensive). Can’t wait to try your recipe!!!

Looks super yummy! You can also add a little plain yogurt to the hummus and it will give it a super smooth taste!!! Enjoy!!!!

I am so glad you posted this hummus recipe. I have a couple can of chickpeas, and buy hummus regularly, so I’ve been thinking I should try homemade.
