
I had lots of questions on my recipe for Greek Chicken Pita’s w/ hummus, and I am sorry it took me this long to post it. There are lots of variations on this, so add your favorites mix-ins. Here are my ideas.
Ingredients
- Whole Wheat Pitas
- Salad mix
- Tomatoes, diced
- Red and green peppers, diced
- Red onion
- Cucumber, diced or sliced
- Feta cheese (frozen from large Costco block)
- Kalamata olives
- Diced grilled chicken (Perdue shortcuts on clearance, pulled from freezer)
- Greek Dressing (Try my homemade Greek Dressing HERE)
Instructions
- Toss all ingredients (minus pita) in a small bowl to lightly coat with dressing.
- Cut pita in half and microwave just until warm and pliable – about 10 seconds.
- Open and stuff with salad mix.
That’s it, pretty easy, huh?

- Homemade Hummus — Also, I never serve this without my Homemade Hummus Recipe HERE. I spread it on the pita like you would mustard or mayo, then I add in the salad.

Thanks for the hummus recipe – all the ones I’ve ever seen have tahini paste in them (which is expensive). Can’t wait to try your recipe!!!
Looks super yummy! You can also add a little plain yogurt to the hummus and it will give it a super smooth taste!!! Enjoy!!!!
I am so glad you posted this hummus recipe. I have a couple can of chickpeas, and buy hummus regularly, so I’ve been thinking I should try homemade.
