Cooking 101: Black Bean & Ground Turkey Tostadas

I kind of added to a previous recipe to come up with this one!  Since it is a mexican based dish, you can add whatever your favorite mexican ingredients are if you don’t like any of these.  (FYI – The lettuce is not turning brown, it is a red leaf lettuce!)

black bean enchiladas

Black Bean & Ground Turkey Tostada

1 lb cooked seasoned ground turkey (use taco seasoned meat recipe here)
1 can black beans, drained
6-8 corn tortillas
spray oil
shredded cheddar cheese
shredded lettuce
diced tomatoes
Taco salad dressing (recipe below)

1.   Preheat oven to 350 degrees.

2.  Spray baking sheet and corn tortillas with oil.  Toast in oven about 4-5 minutes.

3.  Top tortillas with beans and cheese.  Cook until cheese is melted, about 3-4 minutes.

4.  Let cool about 3 minutes, then top with favorite toppings!

This recipe came from my friend Jill, it is wonderful!!  I keep in the fridge and will probably toss with a mexican inspired pasta dish too.

Taco Salad Dressing

1/2 c. sugar
1/2 t. celery salt
1 t. dry mustard powder
1 t. paprika
1/3 c. vinegar

1.  Heat the above in a saucepan til the sugar is dissolved.
2.  Add 1/2 c. vegetable oil.
3.  Cool and serve over taco salad. Store in the fridge.
