It just doesn’t get any easier than this! These muffins are made with only two ingredients: a can of pumpkin puree and a box of cake mix. That’s it. You will get a muffin that is absolutely delicious, and unbelievably moist! I couldn’t believe how gorgeous they were, too. I am big on food presentation, and these looked beautiful! Plus, they are low in fat, calories, and cholesterol, so they are definitely a healthier option than regular muffins. Easy, a better choice, and made in your kitchen–I’m in!

Pumpkin Muffins Made with Cake Mix

Ingredients

  • One box flavored cake mix (I've tried Spice Cake Mix and Carrot Cake Mix so far, and both were delicious. Next on my list to try is chocolate.)
  • One 15 oz. can pumpkin puree

Instructions

  1. Mix pumpkin and cake mix together.
  2. Add just 2-3 teaspoons of water if you think it is too thick.
  3. Spoon batter into muffin cups until they are filled equally. (You will get 12- 13 large muffins.)
  4. Bake for 18-25 minutes, or until a toothpick inserted in the center of one comes out clean.
  5. Do not overbake.

When you try the chocolate cake mix make sure and add a cup of chocolate chips! YUM!!!!

So you don’t add eggs or anything? Just the powder from the cake mix and the pumpkin?

I just made them for my kids play date today! Oh my word they were so good, and everyone loved them. Kids and parents! I did it with the spice cake mix, and it was so yummy. I think I will add chocolate chips and maybe nuts next time. Thanks for sharing this. Merry Christmas!

Oh I must add this was a good lesson in faith. I was not sure about make muffins without eggs but I went ahead and had “faith”! I’m so glad I did! :)

I love this recipe. I keep making them over and over again! The spice cake mix is my favorite. (and they are only 4 points plus in WW).

You can make cookies this way too. I like to add raisins, or nuts too.

Nope -just the dry cake mix & canned pumpkin. It’s that simple!!
