Ham & Cheese Quiche

Tonight’s Eat From The Pantry dinner was Ham and Cheese Quiche. My daughter calls it “Egg Pie” and eats everything but the crust.  She actually ate half of this before my husband got home.  I think I should have made two!

This is one of my “Go-To” meals when I have lots of eggs on hand.  You can easily change up any of the added ingredients to make it your own and suit your tastes. Some things you could add are sausage, bacon, spinach, zucchini, tomatoes, fresh herbs, olives, any cheese (feta, parmesean, cheddar, monterey jack, goat), red peppers, onions, you get the picture!

I decided to make this because I had leftover sliced ham, lots of eggs, plenty of cheese on hand, and a few pie crusts.  I will probably make another Cheese Quiche on my next Provisions Prep Day since I have crusts and tons of cheese.  I always have lots of eggs on hand!

Ingredients
  • premade pie crust or homemade
  • 5 eggs, beaten
  • ¾ cup milk
  • salt & pepper
  • 1 cup shredded cheese
  • ½ cup diced ham
Instructions
  1. If you are using a pre-made pie crust, let it sit out at room temperature while you gather and mix ingredients. If you try to roll it out cold it will crack.
  2. Preheat oven to 375 degrees.
  3. Lay pie crust into pie plate. Fill bottom of crust with cheese and ham. I am very generous with the ham and cheese, that is what makes it so tasty!
  4. Mix eggs, milk, salt and pepper (to taste) and pour over ham and cheese into pie crust.
  5. Bake for 35 minutes. Center will not jiggle when done.

TIP:  I use a crust protector to keep the crust from burning, you can get these from any kitchen store.

    Where do you get your eggs cheaply? I used to get them at Aldi for 49 cents/dozen but they have gone up to 79 cents/dozen the last time I checked.

    I made one of these last week, but I didn’t have a pie crust. I found a recipe online where you could make the crust out of frozen hash browns. That worked out really good & all 3 of my guys ate it. It was the first time I had ever made a quiche & I wondered if they would turn up their nose at it, but they didn’t & actually said they liked it.

    I love that yours only takes 35 minutes to bake! My recipe takes 60-75 minutes at 350, but it also has lots more cheese and also boiled eggs in it.

    Hi this looks easy, and delicious so I’m definitely going to try. Can these be frozen to eat later in the week and since I’m new to this site and pre making things to freeze can you suggest best way to do so. Thanks so much! I came upon this site by accident ,or should I say, divine intervention : ) and have been so blessed by it!!

      Yes, you can freeze, tastes great! Just wrap in wax paper and slip into a freezer bag. 🙂

    I have been surfing the web for gift ideas that were more thoughtful than the normal flowers I give my mom every year for Mother’s Day. Because she is a massage therapist and works odd hours to help her clients feel better she often talks about dreading going home to cook something. I love this idea and will be making two quiches for her. Thank you so very much for reminding us that stopping to do something like this can mean a great deal to others!!

    Hi I am thinking of using one of your quiches for my supper swap meal this month. I have never frozen a quiche and was wondering how to freeze it? Fully cooked or not?

      If you can, fully cook it. Otherwise, you can just freeze the egg mixture separately and then thaw and pour into a pie shell when you want to cook it!
