Orange Juice Slow Cooker Pork

Last night, I cooked my friend Kristi’s orange juice pork recipe, and it was out of this world! (Thanks Kristi!) She has 4 kids and they are about to adopt their 5th child, so she knows a lot about finding super easy and good meals. I just have two little ones, but I’m all about finding the shortcuts that will still lead to great-tasting, nutritious meals.

I usually cook enough of any meat to use it in another dish that same week, or to have a meal to put in my freezer. The Orange Juice Slow Cooker Pork recipe is below, and you’ll want to use your leftovers in my Pork and Spinach Quesadillas Recipe.

Orange Juice Slow Cooker Pork

Ingredients
  • pork shoulder or tenderloin (I prefer shoulders in the crockpot and tenderloin on the grill)
  • orange juice (to cover the pork)
  • onion, quartered
  • potatoes, quartered/large diced (optional)
  • Mrs Dash (optional)
Instructions
  1. Place the pork in the crockpot.
  2. Sprinkle with salt, pepper, and Mrs Dash.
  3. Place onions and potatoes around the pork, then pour enough orange juice in to come at least half way up the pork or to the top if you want more juice/sauce.
  4. Turn slow cooker on for 8-10 hours.

TIP : Try this with my Cabbage Salad with Apples and Ginger Vinaigrette. I also threw ingredients in the breadmaker and voila! We had a meal that took very little work from me. The bread was great for dipping in the orange/pork sauce! (If you find crescent rolls or biscuits on sale, you could always go with that alternative as well.)
