Kelly’s Homemade Granola

I got some great recipes from my readers when I put a request out there on Facebook yesterday for some new granola recipes.  I took something from each of them and made my own and I have to say it was pretty good!  I put it over my strawberry salad for lunch.  This is really easy and pretty good and healthy. You can do so many substitutions with this, just try to make sure your dry to wet ingredient ratio is about the same.  So about 10 cups dry to 2 cups wet. Also, I used quick cooking oats, because that is all I had on hand and they did fine.

Here are some substitutions:

dried fruit – blueberries, cranraisins, raisins, apricots, banana chips
nuts – pumpkin seeds, sunflower seeds, sliced almonds, pecans, walnuts
sweeteners:  brown sugar, honey, agave nectar, maple syrup, turbinado/sucanat

Ingredients
Dry:
  • 6 cups old-fashioned oats
  • 1 cup wheat germ
  • ¼ cup ground flaxseed
  • 1½ cups total nuts or ½ cup each of sliced almonds, pecan and walnut bits
  • 1 cup sunflower seeds (or pumpkin seeds)
  • 1 cup coconut
  • 4 teaspoons cinnamon
  • 1 teaspoon salt (omit if sunflower seeds are salted)
  • 1 cup dried fruit (craisins, raisins, apricots) – optional
Wet:
  • 1 cup honey (heated in microwave), brown sugar, or white sugar (add sugars to dry ingredients)
  • ½ cup canola oil or butter, melted
  • ¼ cup maple syrup
  • 1 tablespoon vanilla
  • 1 cup dried fruit (craisins, raisins, apricots) – optional
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients in a large bowl. Mix wet ingredients in another small bowl, and heat in the microwave to mix through. Stir both together until well mixed.
  3. Grease two 9×13 baking dishes and place granola mixture in them evenly.
  4. Bake for 20 minutes, then remove and add dried fruit (if you are using). If not, still remove and stir, bake another 20 minutes, stirring at 10 minutes in. Keep a close eye on it the second round, it burns easily! It should be evenly brown. Cool and store in an airtight container.

    This does look yummy! Especially the coconut. But, where do you find wheat germ in the grocery?

    I only cooked mine for 28 of the total 40 minutes and it had already burned :(. I now have massive amounts of not so tasty granola, but before I cooked it the flavor was great so I can see this being delicious. Just watch it better then I did.

    Wonder if one baked this like caramel corn for longer time at 200-250 instead, if less chance of burning. On another recipe, I burned mine also. Our favorite lately was simply the ‘crisp’ topping from a fruit crisp recipe. I simply quarupled recipe and then backed off a bit of the brown sugar and added honey instead. Because of the heat in the summer, I cooked this in microwave for about 5 minutes on 50-70% power, stirring every minute or two. Then I kept breaking up some of it with a fork. Part I pressed into foil and cut into 4 bars and sent camping with hubby and son. Greatly appreciated! (Read that, they ate it all and complimented the baker!)

      I just started making chewy granola bars for my family a few weeks ago and went through a few trieals til I found the best one. This recipe has been taste tested by friends and family and all love it better than store bought. They stay chewy and also freeze well.

      4 cups old fashioned oats
      1 cup wheat bran
      1/4 cup flaxseed meal
      2 cups whole wheat flour
      1 cup brown sugar
      1 1/2 tsp salt
      1 tsp cinamon (or to taste)
      2 1/2 cups dried fruit ( i used raisins and plum amazins)
      2 eggs
      1 cup honey
      1/2 cup veg or canola oil
      1/2 cup peanut butter
      1 cup applesauce ( i used homeade)
      4 tsp vanilla
      -mix all together and press onto a VERY well sprayed/greased 9×13 baking sheet. Bake 350 for about 20 minutes, only til edges are browned. Let cool for just a couple of minutes and flip onto waxed paper to cut into bars. I cut into squares and wrap each one in plastic wrap and freeze half of them as this makes a very large batch of very filling granola squares. *applesauce makes them chewy.

    i made this months ago as written and it burned. tried again last week but at 250 for 30 minutes (stirred every 10) then added the fruit and cooked another 20. it was perfect.

    Been wanting to make my own granola.
    This recipe looks good, as well as the chewy granola bars in comment above.
    Looking for a recipe without sugar in it though. Since this recipe already has honey and maple syrup plus brown and white sugar what healthier substitute could I use in place of the brown and white sugars? Or would it be okay just left out?

      It would be fine left out, just not as sweet. Try it with just honey or maple syrup.
