Last week ended up being a full-fledged “Eat From the Pantry” week. I only went to the store to get some milk and produce, which was a nice break for us. So, I am back at it again this week and I am hoping to start “lightening up” our meals a bit. I need to be looking for more fishes like tilapia and salmon, we are totaly out. Those may start popping up more on the menu if I can get some soon at a great price.
I was getting sick of the same old meals, so this afternoon I sat and enjoyed flipping through cookbooks to get ideas for this week and below is what I came up with. My friend Meredith in Atlanta, sent me a really yummy looking Shredded Beef Enchilada recipe, which is like a mole sauce that I can’t wait to try next week!
We have a lot going on this week so I will only need to make a few dinners this week.

Meal Plan for the week of May 16th:
Sunday:
(Lunch) Scrambled Eggs, Turkey Bacon and Biscuits with Apple Butter
(Dinner) Community Group – No cooking for me!
Monday: BLT Salad w/ Buttermilk Dressing (will post recipe!)
Tuesday: Slow-Cooker Herbed Pork, Baked Sweet Potatoes w/ butter & brown sugar, and steamed broccoli with wheat rolls
Wednesday: Pork Fried Rice , egg rolls, ginger carrot salad (shredded carrots w/ ginger dressing)
Thursday: Dinner Out w/ Friends
Friday: Slow Cooker Asian Beef Ribs, sauteed Asian veggies (not sure what yet)
Saturday: Family Dinner Event

Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Leftovers – BBQ Pork Sandwiches, Quesadillas

breakfast burrito (egg, cheese, & salsa)
