Menu Plan Monday: April 6th

Welcome!  For those of you who are new to Meal Planning, go to my “Meal Planning” tab here to help you out while you are getting started – lots of great resources.

We ended up eating a lot of leftovers last week, so I am still slating a few meals from last week back in.  Also, have you noticed lots of cantelope and strawberries in the past few weeks?  It looks like they have gone back up in price, but we might see another little drop for a while, until they are completely out of season.   I love summer, so many inexpensive fruits and veggies, stock up time!

Meal Plan for the week of April 6th

Sunday:
(Lunch)   Pasta and Tuna Leftovers from Friday night
(Dinner)  Grilled Tilapia Sandwiches, sweet potato fries, green salad w/ cherry tomatoes and FREE french dressing

Monday:   Crockpot Dijon Pork (recipe later), mashed potatoes, steamed broccoli

Tuesday:    Black Bean Enchiladas

Wednesday:   Rigatoni with Squash & Shrimp, homemade bread

Thursday:  Pork Fried Rice (leftover pork from Monday), Ginger & carrot salad

Friday: Beef Empanadas (from freezer), green salad

Saturday:   Homemade Pizza (homemade sauce and breadmaker pizza dough), toppings:  green peppers and ham

Lunches:

Turkey & Ham Sandwiches, cantelope
Grilled Cheese Sandwiches, sliced apples
PB&J, apples
Leftovers – pork quesadillas,  pasta
Free Arby’s Sandwich

Breakfast:

homemade french toast (freezer), cantelope
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, cantelope
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

    This is our clean out the fridge/ freezer week, so I only spent $22 for groceries at Publix yesterday (saved $28). We are having:
    Monday- spaghetti with meat sauce
    Tuesday- Chicken casserole (freezer)
    Wednesday- Zucchini/ bacon quiche. I have a ton of Zuc. in the freezer, so we are also making chocolate Zuc. bread this week.
    Thursday- Frozen pizza
    Friday- leaving for vacation!!

    I see the free Arby’s sandwich on your lunch list…..did I miss it, are they running another free sandwich deal this week?
