Oven-Roasted Broccoli

Oven-Roasted-Broccoli

This is one of my favorite ways to prepare broccoli. I love it steamed with a little lemon-butter sauce, but oven-roasting broccoli gives it a really nutty, caramelized, and buttery taste that is very different and unusually flavorsome. WARNING: If you have never had oven-roasted broccoli, you may never go back!

Once you pull the broccoli out of the oven, you can enjoy it as a side with any chicken or pork dish. It goes great with salmon too.  When you incorporate oven-roasted broccoli as a pizza topping or toss it into a pasta dish, you’ll add more flavor, color, and nutrients for your family.

You can flavor the broccoli to your liking, but some ideas are:

  • lemon pepper seasoning
  • soy sauce
  • minced garlic
  • red pepper flakes
  • Parmesan

Serves: 4-6
Ingredients
  • 1 head of broccoli, stems sliced length-wise
  • Olive oil
  • Sea salt
  • Fresh ground pepper
Instructions
  1. Preheat oven to 425 degrees.
  2. Place broccoli on cookie sheet.
  3. Drizzle with olive oil.
  4. Sprinkle with salt and pepper.
  5. Toss to coat evenly.
  6. Cook for 15-20 minutes or until browned.

    Do you think it would work with frozen broccoli florets?

      I am not sure, I haven’t tried that yet. I think frozen broccoli is usually best steamed, but let me know if you try!

    Would you season with other things before baking? Would the garlic burn?

      I put dried minced onion on about 2 minutes before they are finished cooking otherwise it burns.

    I do it this way with asparagus. I never thought about doing it with broccoli! Yum!

    Absolutely delicious! The crisp florets are just scrumptious. Even my husband, who isn’t a big broccoli fan, loved it! I’m so happy to find another way to get my boys to eat their veggies.

          Lemon Butter Sauce
          2 tablespoons butter
          1 tablespoon lemon juice
          salt and pepper
          put in glass bowl and melt either in microwave or on stove.

    Oh my goodness yesssss! You are so right in that warning! I tried it for the first time last month and announced “We will never have broccoli any other way!” I am head-over-heels hooked on this method! One thing I do differently, though, I add chopped fresh garlic. But, then, I’d put garlic on just about anything except my dessert. LOL
    Oh, and IF we ever had leftovers, I like your suggestion of putting it over pasta with lemon butter sauce! Thanks!
