French Toast

I accidentally bought 2 extra loaves of bread this week and I already had 2 in my pantry!  So,  we have eaten lots of sandwiches this week.  I also had lots of eggs and milk, all the things to make French Toast. Here is my version:

Ingredients
  • sandwich bread
  • 5 eggs, beaten (I used Eggbeaters)
  • ¼ cup
  • lots of cinnamon
  • cooking spray
  • powdered sugar (optional)
  • fresh fruit (optional)
  • syrup (a must!)
Instructions
  1. In a shallow bowl or pan, beat eggs, add milk and sprinkle in cinnamon. Beat to mix again. I just beat with a fork.
  2. Dredge bread in egg mixture, be sure to coat well.
  3. Heat pan on medium heat, cover with cooking spray right before you put bread in. Brown both sides.
  4. Top with powdered sugar, fruit and a little syrup, enjoy!

5.  I cooked up a whole loaf, cooled it on a rack, then put into freezer bags for later.

    How do you reheat your frozen french toast? On the stove? And is it mushy?

      Chrissi – I put it frozen in the oven and just “toast” it. I use the same directions for a frozen waffle out of the box!

      Oops, sorry! 1/4 cup of milk (cow’s, almond or coconut will work great)

    This sounds so good and I love the idea about freezing them! Instead of milk, you could try using French Vanilla coffee creamer! (any flavor would do, I guess)

    My mom makes these for her mom who has a hard time manuevering around the kitchen and being on her feet too long. All the kids pitch in to make freezer ready meals for her. My mom makes a whole loaf of french toast, puts it right back in the bag and then freezes it. This is a great quick meal for her for breakfast, lunch, dinner or snack! 🙂
