Sometimes, my meal plan doesn’t go as planned. There can be numerous reasons for it.
It could be that one of the kids gets sick, and I spend the day waiting at the doctor’s office, running to the pharmacy, and holding a feverish, uncomfortable child.
It could be that dinnertime rolls around and I just don’t feel like what’s on the menu.
Or it could be that it’s a welcome, beautiful, spring day–and we stayed at the park too long! That was the case today, so by the time we got home, I was looking for an easy, quick recipe. This Parmesan Crusted Chicken from Hellmann’s was a perfect fit.

The Parmesan Crusted Chicken is already a favorite for me because it is a quick and easy meal. I usually double this recipe. We eat it for dinner and then use the leftovers for lunch the next day. It is super as a kid-friendly lunch you can send with them to school. Just cut it into strips like chicken fingers, or use it for a sandwich, adding a little more Hellmann’s, lettuce, and tomato.
