What's For Dinner Tonight? Ummmm…something with leftover chicken!

I got so caught up in projects, I just realized it’s 5pm and I forgot to start dinner, oh… and post What’s For Dinner Tonight! Okay, are you starting to get a glimpse that my weekly meal plan is a loose idea of what we are doing? Do I want to keep doing this so you can all see just how unorganized and unplanned I can be? he he…

    My mom and I make a fall soup mix every year that is full of vegetables. We freeze it in batches of 2 cups and then we can make 8 different soups with it. Tonight is the last batch in my freezer and I am making goulash with some noodles and ground pork we will also have some cornbread on the side.

    Well, I boiled a whole chicken yesterday, intending to use it for something (I never have dinner quite figured out). However, I got caught up in Dancing With the Stars and 24, so I kind of forgot that I was supposed to make dinner for my family (yeah, no Mom of the Year awards for me).

    I did have the wherewithal to put said chicken in the fridge before I headed to bed.

    So, what to do tonight?

    After much hunting on the internet, I decided to make a Barbecue Chicken Pizza with homemade crust. I simply took a bottle of sauce from the fridge, spread out about one cup on the dough, added the chopped chicken and some dried basil and onion powder. I topped it off with mozzarella cheese and baked. Voila!

    What a huge hit! It was easy and yummy! I will definitely do this again!
